Ingredients
  

  • - 2 cups whole milk yogurt about 450 g
  • - 1 ¼ cups mayonnaise about 300 g, preferably Duke’s or similar
  • - 1 tablespoon curry powder about 15 g
  • - 1 tablespoon finely grated garlic about 3 cloves or 15 g
  • - 1 teaspoon ground turmeric about 5 g
  • - Zest of 2 lemons
  • - 1 ½ tablespoons fresh lemon juice about 20 g
  • - ½–1 teaspoon salt to taste
  • - 1–3 tablespoons water as needed to thin (optional)

Method
 

Combine the base ingredients:
  1. In a medium mixing bowl, add the yogurt and mayonnaise.
  2. Whisk until the mixture is smooth and well combined.
Add the spices and aromatics:
  1. Add the curry powder, grated garlic, turmeric, lemon zest, and lemon juice to the bowl.
  2. Whisk again until the dressing is evenly mixed and the color is a uniform golden yellow.
Season and adjust:
  1. Add ½ teaspoon salt and whisk to incorporate.
  2. Taste and add more salt if needed.
  3. If the dressing is thicker than you’d like, whisk in 1–3 tablespoons of water, a little at a time, until it reaches your desired consistency.
Chill and serve:
  1. Transfer the dressing to a jar or airtight container.
  2. Refrigerate for at least 20–30 minutes to allow the flavors to meld, if you have time.
  3. Serve drizzled over salads, grain bowls, roasted vegetables, or grilled proteins.
